Robert Parker has effused that this bubbly comes across, "like a high-quality French Champagne Blanc de Blancs." And this is almost entirely Chardonnay, the famous grape of Champagne (among other regions). But lest you think this is a case of a new producer planting to meet international demand, the family-owned Naveran estate has been producing Cava since 1901. And some of these Chardonnay vines are over 60 years old! The result are truly exceptional grapes to work with. Made in the same method as Champagne, the Dama spends 24 months in bottle on the yeast cells (lees). The more time spent on the lees, the more creamy the wine, and the more nuanced the flavors. Spanish law only requires nine months. Champagne is aged a minimum of 18 months. So, at 24 months, the Dama shows an abnormally high level of finesse and sophistication. Broad apple and pear flavors and a creamy texture make this a wonderful match with richer fish, like halibut, or even pork loin.

Crisp notes of apple skins, brioche, baking spices and pears emerge from this fragrant, medium-bodied sparkler. It possesses tiny, uniformed bubbles, impressive purity and a heady finish.

Persistent effervescence and aromas of apricot, orange blossom and dried tarragon rise from the glass. This Cava is soft on the palate, offering flavors of mandarin orange, white peach, dried Mediterranean herbs and slivered almonds that glide into a bright, citrus-filled finish.
