My advice? Get it before they do!
From the village of Chavot located in the Coteaux Sud d’Epernay, a sub-region sandwiched between the Côte des Blancs and the Vallee du Marne. Aurelien Laherte is a very talented young vigneron, one to watch for sure. His vineyards are biodynamically farmed and his wines are strikingly vibrant and pure. This wine comes from two plots that are dominated by chalky soil. It’s softer and more crumbly than the hard chalk of the Côte des Blancs, making for a slightly rounder and fruitier profile. It’s still 100% Chardonnay, and the low dosage of 4 g/l is all that is needed to add balance. Overall, it is a steal…

"The 2021 Champagne Blanc de Blancs Les Grandes Crayères Extra Brut is made without malolactic fermentation and without filtration. Dosage is two grams per liter. A bright but pale-yellow hue, I love the nose, which shows off a refined and elegant profile of lemon sorbet, chalky earth, white flowers, and fresh bread dough. The palate is medium-bodied, crisp, and tension-packed, with underlying notes of lemon oils, pastry cream, and oyster shells. Oceanic and bright, with a zesty profile all around, for me, the oak is not evident in the aromatics here, but rather in the texture, and I imagine it will develop a soft suppleness over time. Not for the faint of heart, it requires time, but it should only improve as it matures. Drink 2027-2050." - Audrey Frick

"The 2021 Extra Brut Blanc de Blancs Les Grandes Crayères 1er Cru is stellar. Bright, punchy and chiseled, the Les Grandes Crayères screams with character. Lemon oil, chalk, mint, dried herbs, white pepper and marzipan sizzle in the glass. What a gorgeous and expressive Champagne this is. The Grandes Crayères is fermented and aged in barrel, but what comes through most is the intensely chalky, mineral character of vines in Chavot that were planted from 1953 to 1978. This is classic Laherte all the way. Dosage is 2.5 grams per liter. Disgorged: December 2024; multiple disgorgements throughout the year. Drink: 2025-2032." - Antonio Galloni
