The Fillons organically cultivate a geological mosaic of 30 acres, separated into 15 parcels, in the most northerly part of Languedoc at the foot of the Larzac plateau. With strictly controlled yields and parcel-by-parcel vinification in concrete vats, their aim is to showcase the fruit and freshness of the region.
Serres & Co. is the result of the Fillon's desire to be ambassadors of the Languedoc. Their terroir knowledge and the close relationships they have built since 2006 with their neighboring wine growers allow them to select fruit from small, qualitative plots. Setting the same level of standards as on their estate, and keeping their own style, showcasing fruit and freshness.
