Harvested, fermented and aged almost exactly like the Pinot Grigio, except this Sauvignon Blanc did not see any skin contact. Perfectly crisp and clear in the glass, it almost startling when the bright herbal citrusy aromatics hit you in the nose. The surprises continue when the texture completely belies the subtle color. The palate is smooth, almost creamy, like a Bordeaux Blanc with the addition of Semillon. This is 100% pure cool-climate Sauvignon Blanc, however, and the sensation is so satisfying and chuggable.
“A perfect balance between freshness and depth! Typical varietal aromas of grapefruit as well as tomato leaf, not too aggressive though. On the palate, plenty of texture and minerality, bright acidity balanced with some weight and creaminess from lees aging, and a long finish.
