If you've picked up a wine magazine in the last year or so, you have likely come across the name "Daou". Brothers Georges and Daniel Daou, who retired in their 30s from the software industry, turned their attention to wine when they started purchasing land in western Paso Robles in 2007. They have quickly become one of, if not THE preeminent producer of Cabernet Sauvignon in the Paso Robles region of California. They have spared no expense building a state of the art winery and tasting room. More importantly, they have payed meticulous attention to the grapes. To mitigate the region's heat, they purchased and have planted vineyards at 2,200 feet! Temperatures can swing as much as 50 degrees in a day! Further, Daniel has planted nine different low-yielding Cabernet clones in order to find the perfect combination of soil, micro-climate and clonal variety. Combined these factors produce incredibly complex flavors that combine ripe, luscious fruit with vibrant acidity. Their flagship wines are garnering 96+ pt reviews and $100 plus price tags... yet they still produce a "wine for the people!" And what a wine it is...
