Located in the heart of the Cote Chalonnaise, Givry was reputedly the favorite of French King Henri IV in the 16th century. The man had good taste, if not good luck (assassinated.) Anyway… the favor afforded the region by King Henri IV has not carried over to modern times, which means… A Deal is to be had!
The Cellier aux Moines is the renaissance of one of the oldest domaines in Burgundy, in Givry, known as a Cistercian Cellier surrounded by its Clos since 1130. Having been the Abbey of La Ferté’s wine-producing property for nearly seven centuries, and then owned by the same family for two centuries following the French Revolution, it was purchased in 2004 by Philippe and Catherine Pascal, who have restored the estate to its ancestral glory.
Most of the vines are 40-50 years old with a small portion being replanted 15-20 years ago. Cellier Aux Moines is a practicing-organic operation with a gravity flow winery built into the hillside of an old limestone quarry in Givry. The grapes are all hand-harvested, cold-macerated in whole bunches with indigenous yeast fermentations and, thanks to the lack of mechanical pumps, the wines are agitated very little during the process leaving you with such a silky smooth juice… That’s the good stuff!
Loads of fruit up front like raspberries, red cherries, pomegranate… The oak is very well integrated and in no way overpowers the wine. It just lends a touch of spice and mushroom character. It finishes with the most velvety tannins and just seems to linger forever… Honestly, this is killer juice and it will be gone in a heartbeat, even at this price. Actually, especially at this price! “The 2017 vintage for red Burgundy was Janus-like. Some wines are charming and forward. Others, like this one, have the requisite substance, structure, and balance for the long haul. This was the first year the domaine was almost fully biodynamic, and, that perhaps, explains the wine’s brilliance. Immediately expressive, the 2017 grabs your attention. Aromas leap from the glass. On the palate, it combines firm mineral qualities with a Bing cherry-like fruitiness in a suave and elegant package. Fractionally less ripe compared to the 2015, its minerality shines. “Fine even mid purple. This has a very lovely nose, with upwards of 80% whole bunch but it comes out gently. Perfectly judged ripeness, with a sweet cherry centre which covers the tannins that follow. Whole bunch may help here too. This is extremely fine.” Jasper Morris, Inside Burgundy
