Bernard and Monique Defaix started their domain in 1959, with a little more than 4 acres. Through hard work and steady investment, their estate now covers nearly 70 acres in Chablis and 14 acres in Rully (Côte Chalonnaise). Since the late 1990’s, the domain has been managed by Bernard and Monique’s two sons, Sylvain and Didier Defaix. They are the largest owners in the 1er Cru lieu-dit Cote de Lechet. Two primary features characterize this wine. First, the cru is one of the steepest and stoniest in Chablis. As a result, the wine has a particularly high mineral content. Additionally, the vines here are some of the domain's oldest, with a portion representing Bernard's original plantings from 1955! Sixty-year old vines, from a steep, stony soil... I'll boil it down for you. The result is a very powerful, mineral-driven Chablis with some of the longest aging potential in all of Chablis!
So, what does that have to do with this wine? Simple. "Petit Chablis" is a broad appellation that encompasses the higher portions of the winegrowing slopes or the edge of the plateau. But, THIS Petit Chablis... THIS one comes from the higher portion of the Lechet vineyard. Interestingly, this is one of the few areas where the 1er Cru vineyard doesn't turn into Chablis AOC before turning into Petit Chablis. No, here, the Petit Chablis is literally a foot from 1er Cru! A stunning value!
An expressive nose of white flowers (may, acacia) mix with citrus notes (lemon, grapefruit) and a whiff of sea breeze. Notes of peach and apricots tantalize under the surface. There is good richness to the very round and seductively textured flavors. A hint of salinity (again, think sea breeze) brings it all together on the finish. Yum!
