Dedicated in to the house’s co-founder this wine is always a blend of 60% Pinot Noir and 40% Chardonnay. Approximately 5% of the fruit fermented in oak barrels and the wine spends 11 years on the lees building complexity.
Winery note: A beautiful golden yellow, glinting with bright sparkles. The glittering, crystalline appearance is set off by an eruption of finely chiselled bubbles. A balanced tension is achieved by the blossoming of the wine (peaches in syrup, fine apple tart and mountain butter) and embodied in the noble flavours that follow (fresh fig and wild berries). It combines all the richness of an aromatic curve, both complex and refreshing. Intense, fine notes of orchard fruits, associated with the character of stone fruits (Mirabelle plum and sweet cherry) and accentuated by the burst of a long floral note (hawthorn). This tense and mineral vintage, characterised by an elegant vinosity, offers you all the distinction of a well-aged Champagne. Served at cellar temperature (11° to 12°), this cuvée will reveal the flavours of a Bresse roast chicken or a delicious milk-fed veal chop with chanterelle mushrooms.

This is 2008, regarded as one of the greatest vintages Champagne has seen in decades!Billecart's basic 2008 Vintage was rated 97 pts by Decanter! The Cuvee Elisabeth Salmon vintage rose was created in 1988 as a tribute to co-founder Elisabeth Salmon. Only bottled in exceptional vintages, this is just the fourth bottling ever of this wine! A blend of only the very best fruit, 50% Pinot Noir from premier and grand cru vineyards in Montagne de Reims and the Vallee de Marne, and 50% Chardonnay from grand cru vineyards in the Cotes de Blancs.
Winery note: Its appearance is luminous, with soft, coppery shimmers and a sustained salmon pink hue. There is a refreshing sensorial experience of citrus peel and red berry jelly. With the exquisite sensation of a rich and complex aromatic generosity (Plougastel and Mara des Bois strawberries, pêche de vigne). Pretty, refined and mature olfactory notes that bring out the inimitable fragrances of sweet spices and wild raspberry pulp. A measured strength which is delicate and charming at the same time, with the harmonious maturing of flavours (mandarin, blood orange, and Reinette apple tart). An ample and full character in the mouth unveiling a chalky edge and persistent finish of citron zest as well as red and white currants. This great and highly refined wine presents its personality with wonderful delicacy of texture and flavour. The aromatic charm of a rare mineral aspect to pair with beautiful poulet de Bresse with crayfish or a few Breton langoustines royales.
“A Champagne of precision and class, the 2007 Brut Rosé Cuvée Elisabeth is light, airy and finely cut. The blend is 50% Pinot Noir from the Montagne de Reims and the Vallée de la Marne and 50% Chardonnay from the Côte des Blancs, with a touch of still Pinot from Mareuil-sur-Aÿ. Not surprisingly, the Chardonnay plays a significant role in shaping the wine’s personality and overall feel. Citrus, orchard fruit, crushed berry and floral notes are all nicely lifted.
