I would compare this with $50+ Condrieu from the Northern Rhone. At this price, it is ridiculous!
Back in 2012 the pioneering Eduardo Soler planted exclusively Rhone and Spanish varietals at 3600 ft in the Uco Valley of Mendoza. This was a pretty bold move considering Argentine powerhouses such as Catena Zapata and Zuccardi were already getting massive scores and $50-$100+ a bottle for pretty much any Malbec they grew in this region. Eduardo persisted, his winemaking ethos focusing on fresh, low alcohol, and lighter skin contact, going against expectations of Argentine wine. Almost ten years later and Ver Sacrum’s wines are receiving growing critical acclaim, but thankfully they aren’t selling for $50+ a bottle... yet!
.jpg) "This is the new white in the Ver Sacrum portfolio, and it's a co-fermentation of 70% viognier, 20% marsanne, both from Los Chacayes in the Uco Valley, and 10% pedro ximénez from eastern Mendoza. Fermented in concrete and 20% aged in barrels under the veil of flor (as is the Geisha de Jade, the winery's classic white), this offers a succulent body, lots of strength, and a texture that does a very good job of combining the density of the fruit with the savage texture of the tannins. A white to drink with sweetbreads or to cellar for five years." Descorchados Viognier is a killer pairing with all types of dishes, including simply roasted chicken and pork. But where it really sings for me is with fish and shellfish, particularly shrimp. Expect to pay at least $80 for a bottle of Hermitage Blanc from the Northern Rhone that compares in quality to this gem. Yes. $80 and up.
Eduardo ferments this sustainably-farmed Marsanne (40% ) and Roussanne (60%) slowly and very naturally, with minimal intervention. He uses whole clusters in fermentation, not particularly common for white wines. The inclusion of the stems adds structure and weight to the wine. After fermentation, most of the wine is put into large concrete tanks to preserve the fresh, fruity aromatics and flavors - tangerine, peach, apricot. A small portion (10%) is put into barrels and aged under a veil of flor - a naturally occuring layer of yeast that protects the wine from oxidation and adds a slight spicy element to the finished product.
