I'll admit... I am at a loss for words this morning. Mostly because I keep looking at pictures of Corsica and... wow... I mean look at that! A wild and rocky island, Corsica is a unique place. Ruled by the Republic of Genoa from 1284 to 1755, Corsica has its roots deeply planted in Italian culture. But as a French territory for over 200 years, the island also has a strong foot in that culture as well. The result is a unique blend of cultures that...

Sigh... I wanna be on that boat... gently rocking... breeze blowing... It's currently 72 degrees and sunny... And would you look at the time? Time for a glass of wine! (As I am writing this, it is 4:30 pm in Corsica).
Okay... enough dreaming... what have we got? A blend of Sciaccarellu, Nielluccia and Grenache grown in the eastern mountains. The grapes are hand harvested at night in order to preserve aromas and avoid oxidation. After pressing, the wine is fermented in temperature-controlled tanks - again with the intention of preserving the aromas. All of that preservation certainly worked, as this wine explodes from the glass with aromas of peaches, cherries and currants. There's a plumpness to this wine that offers more weight than a typical Provencal rose, yet it is softer at the same time because of very low tannins. In other words, this baby strikes the perfect balance between a porch-pounder and a table accompaniment.
And for the table? What to serve? Oh my, Corsica is a bountiful paradise, offering loads of fresh fish and shellfish, olives, chestnuts, goat cheese and plenty of charcuterie. The grilled octopus served on a bed of potatoes looks delicious! But I simply cannot pass on the charcuterie platter. Just look at it! Hmmm... and easy to replicate at home! So grab some bottles and hit the store!
