Reading about this wine, my biggest surprise is that it’s not 25 dollars a glass at some hipster wine bar in New York City. This is 100% Old-vine Pedro Ximenez from Cordoba in Southeast Spain. Usually, we associate PX with sherry, but it can be vinified like any other normal wine to make beautifully mineral driven whites with loads of citrus notes. However, the folks at Bodegas Alvear aren’t quite doing that either…
See after fermentation in clay amphorae, the wine then spends eight months under what’s called the “velo de flor”. Literally, the veil of flowers, this is a layer meticulously cultivated microflora that occurs when a barrel is left underfilled. Done indelicately, this can ruin a wine, but in the hands of experienced users this can add cascading layers of unctuous flavors and textures, creating something unbound from traditional winemaking through its wild nature.
The result is something absolutely incredible, a focused, precise white that is full of amazingly concentrated fruit and mineral notes. The aging process ramps everything up to 11, adding a hint of salinity that makes everything all the more mouthwateringly delicious. It’s a beautifully triumphant Spanish white with few, if any, comparisons that do it justice.
For myself, this is an ideal wine to bust upon while making a more involved dinner- great to sip on while doing prep work. There’s also that sherry-like texture that makes it a great after dinner nightcap as well, but it’s still a rockstar with food.
