The curveball here is the wine is comprised of 80% Syrah. Located just southeast of the Rhone region, Ventoux typically offers similarly styled wines based off the Grenache grape. So to find a bastion of Syrah in this sea of Grenache is unique.
The secret lies in the soil – cool limestone – and the elevation. In the shadow of Mount Ventoux, these vineyards are at a higher elevation than their Rhone counterparts on the other side, resulting in a perfect microclimate for Syrah.
Side Note: The Chaudière and Bastide families have now farmed this land for 3 generations. Odette and René Bastide purchased the Château in the early 1970’s. While the building itself dates to the 1750s the lands around it have been cultivated since the Roman era. Recent archaeological discoveries have proven that wine was made in this region as early as the 1st century BCE and the name of the property derives from the Latin name for fish ponds, pescarium – no doubt due to the springs that occur naturally near the Château. Cool! I wanna fish pond!
Anyway, here we have 50+ year-old vines. 80% Syrah and 20% Grenache. The organically-grown grapes are hand-harvested, destemmed and crushed. Aged twelve to fifteen months in barrels: 40% of which are new. This baby us at once big and rich, yet refined and balanced. Velvet glove… iron fist… without the pain! It explodes from the glass with Syrah-based notes of smoke, anise and blackberries, then gives way to a rich mouthful of fruit, along with fine tannins, minerals and a flash of black pepper from the Grenache. Sooo good… I wish I could get more…
I always love reading what the winery suggests as a pairing – they are living a better life than I! “Terrines, roasted red meats, meats in sauces, game (venison haunch, rabbit or wild boar stew, stuffed poultry, poultry with truffles...)”

“The 2020 Ventoux Quintessence is more pretty and perfumed, with gorgeous floral, spice, and blue fruit-driven aromas in a medium to full-bodied, beautifully balanced package. The purity is spot on, it has ripe yet building tannins, and a great finish.”
