“NV Extra-Brut Oeil de Perdrix—entirely from the 2021 vintage and disgorged in April 2024 with a dosage of 1.1 grams per liter—is dominated by Pinot Meunier, complemented by 20% Chardonnay and 1.5% still Pinot Noir, which lends its very delicate rosé hue. Vinified entirely in stainless steel, it bursts from the glass with vivid aromas of cranberry, dry apricot and tangerine zest, mingling with Granny Smith apple and rooibos. On the palate, it is medium-bodied, simultaneously concentrated and taut, underpinned by incisive acidity and concluding with a saline finish. Despite the mildew challenges of the 2021 growing season, which saw Dehours retaining only a third of the crop, the wine is unburdened by those difficulties and expresses appreciable depth and tension.”
