“Les Fourneaux” translates to “The Furnace”, named for its warm mesoclimate. With a tendency towards lower acidity and flamboyant tropical fruit flavors, it requires a skilled winemaker to find balance. Lucky for us, winemaker and owner Charly Nicolle is one of Chablis’ rising stars and Les Fourneaux, located around the town of Fleys, is his home. Expanding his father’s holdings, the Nicolle family is the largest vineyard owner in this small appellation. Charly draws on over 100 years of family experience when approaching this distinct vineyard site.
Having a relatively large acreage of vineyards allows Charly to source from the best sites, at the top of the slope. After fermentation, the wines are kept on the lees in stainless steel tanks to offset the ripeness with freshness and vibrant acid. The lees aging adds a rich mid-palate to the wine without the need for loads of oak. After 12-18 months in tank, Charly transfers 15% of the wine to used oak barrels. Like a great chef layering flavors in a dish, Charly uses all of these techniques to create an impeccably balanced and ridiculously drinkable Chablis!
Aromas of oyster shells and minerals lead into ripe, but not exotic, fruit flavors. There is a wonderful texture to this wine and a sleek, focused finish that begs for another sip. At just 13.2% alc, Charly has cracked the code of this warm vineyard, producing a wine that exudes ripeness but always remains focused and balanced! Hurrah!
