It is what’s in the ground that makes this Domaine’s wines so special. Roots. From the 80 year old vines planted by winemaker/owner Pascal Rollet’s grandfather. Naturally intense and concentrated, the wonderful raw material (aka grapes) is carefully harvested by hand, a rarity these days in the Macon. This allows for gentle processing of the fruit – it doesn’t get prematurely crushed by rough handling and start fermentation in the field. Rather, the grapes are carefully transported to the winery and allowed to begin fermentation under cool conditions. So? So that preserves the bright apple and citrus fruit aromas and flavors that make this wine JUMP from the glass.
The wine is then aged in old oak barrels, helping to impart richness and structure to the wine without obscuring the meticulously harvested and handled fruit. The total package is a rich, yet lively Chardonnay that offers vibrant apple and lemon flavors, melded beautifully with notes of spice and toasted nuts, all with enough structure and acidity to stand up to some hearty winter fare like herb roasted chicken or pork loin with sautéed mushrooms.
