Domaine du Petit Clocher Description
Serve at 16°C to 18°C. Open two hours before serving. Brilliant and intense purple colour. Delicate nose driven by fresh berry fruits like strawberry, and blackcurrant, with hints of liquorice. Palate: Good initial intensity, deliciously moreish flavours of stewed fruit. Slightly tannic structure. An easy-going wine for laid-back occasions.
De-stemming of grapes before fermentation. Winemaking varies according to the year, in order to extract the aromas delicately and quickly: short maceration (not exceeding six days) and use of various techniques (stirring/oxygenation of the must , rotating vats, etc.). Fermentation and malolactic transformation in vats exclusively. Short ageing before filtration and bottling in spring.
