This gem is sourced from vineyards spread throughout the terroirs of the Côte de Nuits, Côte de Beaune and the Côte Chalonnaise. Classic red Burgundy here, folks, with a bright citrus-tinged profile and crisp cherry and berry fruit. This is an absolute "must" to experience with food. Some to consider... beef bourguignon, fondue bourguignonne, escargots de Bourgogne, la matelote d'anguille à la bourguignonne (eels stewed in wine sauce), and gougères (cheese puffs). Coq au vin - chicken cooked in wine - is a personal favorite, as well.
But what I am really craving is Ouefs en Meurette - eggs poached in a sauce of red wine studded with lardons of bacon. Brunch you say? I think not! This is a perfect winter supper. Super fast, and super delicious! With some crusty French bread... hmmm... Click on the picture for a recipe.

This is quite a serious wine for the humble appellation. Plenty of red cherry fruit. A surprising amount of structure on the medium-bodied palate. Bright, almost crisp finish. Matured for six months in oak casks previously used for the 1er and grand cru wines. Drink now.
