Put simply, this is delicious red wine with bubbles. Richly aromatic and intensely grapey on the nose, with dark cherry, dried tea, sandalwood, ground clove, anise and cardamom all adding to the mix. This is a very well-balanced Lambrusco, with just about 2 grams of residual sugar and alcohol content at 11.5%, it toes the line between sweet and savoury wonderfully. Light to medium bodied, bright and fruity with nice round supple tannins and really pretty acidity. Showing a frothy mousse in the glass and a delicate bead of bubbles on the tongue, the fresh flavours of black cherry and pomegranate tickle the taste buds from start to finish.
Truly your pairing options are wide open here. The winery suggests a stuffed pasta dish, like tortellini with ricotta and swiss chard, lasagna or pasta with Bolognese sauce. One of Rich's fondest memories was guzzling a bottle of this down with an Italian feast - roasted red pepper and heirloom tomato salad, meatballs in marinara, pepperoni and Sicilian olive pizza, even chocolate mousse dessert - this wine was the perfect match for the entire meal! Don’t restrict yourself to just Italian food though, NC barbeque, all kinds of meats fresh off the grill, this little wine can pair with them all.
