I don’t necessarily like to throw around the word “best” often, but when we’re talking about either food pairing or patio-pouring, Txakolina is a contender for the crown. This Basque bombshell is far and away my favorite warm weather white for its exceptional versatility and dynamite flavor profile! Seriously- if you’re looking for a wine that will shine alongside any number of tasty tapas while also being the perfect thing to sip by the pool, look no further!
It doesn’t get much more fun than this too. 100% estate-grown indigenous varieties Hondarrabi Zuri and Hondarrabi Beltza, as well as the maritime variety Gros Manseng, this is a classic Getaria-style Txakolina, with light effervescence and brilliant, refreshing acidity. Fortunately the Gaintza has a blessedly low alcohol percentage, because this is some real betcha-can’t-have-just one juice!
And yes, while this is so eminently quaffable the Spaniards drink it by the pitcher, it’s also perfect with all manner of tapas and any sort of appetizer. Shellfish and seafood shine alongside it’s beautiful acidity, and the bit of bubble make it a dream for anything fried. Now, the possibilities are effectively endless, but my personal favorite pairing is some fried Calamari! Some squid from the farmers market, a little squeeze of lemon, a pitcher of Gaintza, and you’re set! Oh, and try the traditional way of pouring... as you start, raise the bottle up as high as you can, all while keeping the stream pouring into the glass.
