So, Ripasso- literally to “re-pass”. It’s a method of winemaking normally associated with one of Italy’s most sought after, bolder reds: Amarone! Valpolicella grapes are harvested and the top fruit is left to partially dry, concentrating the sugars and intensity of flavor while developing Amarone’s unique flavor profile.
A portion of the wine is fermented immediately, instead of drying the grapes. Then, in February, after the Amarone is done fermenting and moved to barrels, this juice is re-fermented on the skins and lees from the Amarone - the wine is "re-passed" over the pomace from the Amarone. Hence, Ripasso!
The result is off the charts. Blended with 10% Amarone, this is a rich red packed with robust fruit and fragrant autumnal spice. It’s bold and deep, but with a bright acidity and a exceptional texture that make for a wonderfully seasonal wine that shows beautifully on crisp fall nights. What I find the most striking is this burst of cranberry and orange peel… definitely a winner with Turkey!
