Txakoli (pronounced jah-ko-lee) is a lightly sparkling, dry wine from the Basque region of Spain. It’s a beautiful combination of effervescence, minerality, and a relatively low ABV that makes this an ideal wine for appetizers and shellfish. Oysters and Dumplings, anyone?
The Masua Txakoli is a blend of the Basque grapes 80% Hondarrabi Zuri and 20% Petit Courbú, fermented in stainless steel with indigenous yeast. It spends 2 months on its lees for a little body, and then that’s it. Clocking in at just 12.5% Alcohol, it’s a zippy and fresh white that pops with bright minerality and acid, but there’s still lovely citrus and tree fruit and a bit of salinity that making you keep wanting more.
See, this is wine with a purpose, and that purpose is pintxos. Pintxos are the collection of various shellfish, fried foods, and breads that populate the bars of Basque country, and this wine is meant for them! It’s perfect for as an aperitif, especially as a partner to fun finger foods like, say, Oysters and Dumplings?
