The 2022 Cabernet Franc Dolomite underwent a triple sorting and includes 40% whole bunch. It was basket-pressed and fermented in stainless-steel tanks, with 50% aged in concrete vats and 50% in neutral French oak. This has a potent nose with a mixture of red and black fruit, red bell pepper and cracked peppercorns, veering more toward the Loire than Bordeaux stylistically. The palate is medium-bodied with a savory opening and a gentle grip. It's quite peppery with an off-dry finish, tingling on the tongue afterward. This is no shy, retiring wallflower, but it is an impressive expression of the variety.
