From one of our favorite under-the-radar producers, Sabine Godme, this gem is 60% Chardonnay and 40% Pinot Noir from the villages of Verzenay, Beaumont-sur-Vesle and Verzy. The dosage is 5 g/l, on the low side for Brut, but just enough to give it more roundness than Extra Brut. The base wine is fermented in barrel, followed by a minimum of three years aging on the lees. A bright nose of apples and chalky minerality leads into a medium-bodied Champagne, rich with lees aging and hints of toasted brioche. The palate is crisp and fresh with a long finish.
