By all accounts, Pošip is the star grape of Croatian white wines. It originally was only grown of the Island of Korcula (circled crudely on the map here), but once it’s quality and popularity increased, vineyards spread farther within the Dalmatia region at the most southern tip of the country.
Island wines are just the best. The maritime influence is impossible to miss or resist. Korcula’s vineyards grow on extremely steep slopes and have a unique quartz soil that together make for a perfectly ripe wine with enough acidity and minerality on the finish to balance out the naturally spicy profile and medium-bodied texture.
Saints Hill owner and winemaker, Ernest Tolj, uses concrete tanks to ferment and age his Pošip, which differs from the usual stainless steel and sometimes oak used by other producers. It maintains the freshness and unique floral, herbal and fruity elements in seamless harmony. Yes, this wine has a lot going on!
Saints Hills Description
“Pošip is a specific indigenous variety, very aromatic and does not profit from ‘spicing up’. It is fermented and matured in big concrete tanks for 6 months to preserve its freshness, and allow it to develop its own specific aromas. Clear golden color. The first nose is dominated by aromas of fresh ripe apricot and mango. Secondary aromas on the nose are lemon and lime(even lemon zest), honey, and dry figs. The palate is complex and layered with aromas of ripe fruit, peaches, apricot, and some pineapple. Finnish is very long, with a specific bitter-sweet aftertaste.”
