Shabo Description
Hand-harvested early in the morning, the grapes arrive at the winery within 15–30 minutes for immediate processing. They undergo destemming, gentle crushing, and pressing in pneumatic French presses (Pera), with the must selection done exclusively by tasting to ensure the highest quality. Fermentation takes place in stainless steel tanks, followed by brief aging on fine lees for less than a month, enhancing freshness and purity.
Colour: pale straw.
Nose: white flowers, sea buckthorn, citrus.
Palate: fresh acidity, good balance, pleasant and persistent finish.
