Shabo Description
Hand-harvested early in the morning, the grapes are carefully placed into boxes with a maximum load of 15–16 kg each. These boxes are then transported in refrigerated trucks maintained at +7 to +8°C and delivered to the winery for processing. The grape bunches undergo meticulous sorting before being gently destemmed using a smooth vibrating destemmer, ensuring the preservation of whole berries. The berries then pass through an additional stage of automatic sorting to select only the highest quality fruit. Finally, the finest berries are transferred into Oak Vats and Stainless-Steel Tanks for fermentation.
Colour: deep ruby red..
Nose: dark fruit, red fruit (blackcurrant, raspberry).
Palate: medium to full body, soft tannins, lengthy and fine finish.
